Chicken Salad is one of those meals for dinner that hits the spot.  However, with the wrong ingredients it can be a very bad eating experience. 

If you want to get a recipe that will allow you to sit down and be completely satisfied, you’re in the right place. 

No need to go out to a restaurant to get a salad for the ages, make it yourself in your kitchen and with your own two hands. This recipe is for two.

Best Chicken Salad Recipe Ingredients  

1 Head of Iceberg Lettuce Organic (if it is available) 

1-1/2 Cups of Organic Baby Kale

1/4 c. Sharp Cheddar Cheese Block (For Shredding)

1/4 Red Onion Sliced

1/4 c. of Mandarin Orange Slices

1 lb. Boneless Skinless Chicken Thighs

2 Tbsp Mild Banana Peppers

Sprinkle of Lawry’s Seasoning Salt

Sprinkle of Black Ground Pepper

Garlic Powder (For Seasoning Chicken)

2 Tbsp Extra Virgin Olive Oil

Start with washing your lettuce in the salad spinner, if you don’t have one it is so worth the investment.  You can get one here.  Once you’ve washed and spinned the lettuce dry set it aside or place in the fridge until the chicken is ready.  

Place the chicken thighs seasoned with Lawry’s, Pepper and Garlic Powder with a drizzle of olive oil and a little water maybe 2 tablespoons in a skillet.  Cover and simmer for about 30 – 45 minutes turning halfway through. 

Keep your eyes on it because everyone has a different type of stove and yours may cook faster.  Cook until it’s really tender.  Once the chicken is ready, take a fork and butter knife and gently tear it in shreds.  Set aside.

Set aside all of the toppings and feel free to add your favorites.  Plate the Salad in this order – the lettuce and baby kale mix, the chicken, all toppings except the cheese – shred the cheese block last.  Then add the dressings of your choice. 

What makes this salad so amazing is the sprinkle of Lawry’s and Pepper on top of the dressing.  My family and I love to use the Ranch, Italian and Balsamic Vinegar in ours, but that is a matter of choice.  I hope you agree that this is the best salad ever…by the way if you don’t care for Iceberg Lettuce feel free to sub it with Romaine, Leaf or Mixed Greens…it’s completely interchangeable, and as with all recipes this is a baseline to give you a good foundation to start with.  Enjoy~
